Yes, I can certainly see the possibilities in Liverpool. Your butcher is especially interesting, because I drew a complete blank in the IoM apart from the directory listing for Ramsey - and still don't know who that Robert Gill was.
Unfortunately Findmypast also came up with "0" results for a Robert Gill butcher in Liverpool in 1851. The Lyons family was at 18 Chapel Lane, Liverpool, with two lodgers, and no sign of Gill in the rest of the street.
I also tried Chapel Lane, Toxteth Park, but no number 18! It went from 16 to 20. Didn't find them at the other (endless) numbers at Chapel Lane Toxteth Park Extra Parochial.
Brunswick Road was not numbered in FMP, and have waded through about half of them so-far looking for Kelly.
I tried the 1861 census for a Jane Gill bapt 1853 in Liverpool, but again no success. FMP has missed out pages at times, so perhaps Ancestry will be better.
The only John Gill hatter found in 1851 was in Southwark "GILL, John Son Unmarried M 33 1818 Hatter, b.
Bethnal Green, Middlesex".
I don't know how accurate FMP is in picking up occupations.
