servant is the formal relationship to head of household (ie someone who is paid for their labour) - slavery was abolished in Britain some centuries ago tho the idea required another century or so + a civil war to make progress in USA

The occupation is generally Ag Lab or agricultural labourer (ie some one who in pre industrialisation days worked mostly by own labour or control of animals on the land - some tasks eg ploughman often required some skill and were better paid.
