I asked a USA researcher friend to help us out, and I have some answers for you!
She agrees with you that Margaret Quayle was the birth mother of your ggrandfather George Watson, and thinks that James Watson was his father, and tells us how she has worked this out.
She writes: According to his WW1 draft registration George Watson was born 10 Mar 1883. This matches the bapt for George Quayle in Douglas with mother Margaret Quayle, so I think Margaret is definitely the mother.
I expect that James Watson was the father although he married Catherine Quirk 7 Sept 1882. George was bapt 6 months after the marriage. James probably got Margaret pregnant but followed through with his marriage to Catherine.
There seem to be several contradictions in the info. James's marriage entry lists his father as Edward but he is found in the IOM census with a father named Adam, and also his bapt names Adam as his father. The 1900 USA census states the Catherine had 10 pregnancies and 6 living children, and 6 children are named, including George. The 1910 USA census states that Catherine had 12 pregnancies and 7 living children, and 7 children are named living with James and Catherine but George is not one of them. George is listed as a son in 1900 which he would be if he was James's illegitimate child.

I coudn't find any of George 's family after the 1920 census but did find a poss for George living as a lodger and widower in Minnesota in 1930.
It would be interesting to find out what happened to the rest of the family - obviously one of the children survived since some one is looking for him.
Winnarae, are you able to tell us what happened to George and his children, since my friend is interested to know?
George's marriage cert should confirm whether James was his father - I look forward to seeing what you find. Do you have his marriage date?
