Ship's baker does sound like a job on a major passenger carrying liner.
Cunard sailed from Liverpool - I believe some of their archives are in the special collections at Liverpool University (I've never used them - just relying on memory whilst researching ship's departures in 1820's).
The newspapers carried lists of sailings from Liverpool but they are very tedious to search - a partial index was being put together but using untrained labour (work experience youths) some years ago but I think it never saw the light of day as requiring too much checking.
