That MI is most helpful because it gives both parents' names for their son's burial, so we can be pretty sure that you have the correct parents of Elinor b.1803 who married John Shimmin of Patrick.

And it also gives the place name of Eary Voare, which Tim should be able to track for this family and for earlier Shimmins through the parish register [Tim, LDS film number given you previously.]

As Charles Shimmin of Eary Voare d. 17 Dec. 1831 aged 56 years he was b.c.1775, but unfortunately many of the extracted (from par reg) German IGI entries at that time have been over-written by church members' ones which may or may not be correct.

There is an extracted entry for son Charles's bapt: 6 Sept 1801 Kirk German son of Charles SHIMIN & Elinor COWELL. (Who was buried aged 2 months.)

There is a Charles Shimin of "Aiey Glass in the parish of Kirk German" 1792 will transcript which mentions "Charles Shimin his brother's son in the Eary Vooar...": www.iomfhs.im/lawsons/twill/1792_001.html
