Ray, here’s a suggestion (but it’s no more than a suggestion):
As there doesn’t seem to be a baptism for a John Walter Crowe circa 1864 in the IGI, I was looking for illegitimate baptisms for a child with christian names John Walter, surname unspecified:
Here’s one possibility but there may be several others:
Isle of Man Parish Registers
Name: John Walter
Event Type: Christening
Event Date: 11 May 1862
Event Place: Patrick, Isle of Man
Gender: Male
Mother's Name: Elizabeth Cowin
Image shows: Illegitimate, address Creglhed ?, Dalby
It’s possible that this child was brought up using his mother’s surname but that he switched to using his biological father’s surname as an adult.
Perhaps someone could look in Presentments to see if Elizabeth Cowin named the father of her child.
In 1861 there’s a 19 yr old Patrick-born Betsy Cowin in Douglas, servant in the household of Archibald Clarke, Egerton Terrace. Perhaps this could be the mother of John Walter Cowin.

notes:
Walter Cowan grandson 9 b Patrick
Earlier censuses of this family show that there was a daughter Elizabeth, age 9 in 1851 who could have been the mother of John Walter Cowin.

I see from your Ancestry tree that you haven’t found John Walter Crowe in 1891----here’s Ancestry’s mistranscription:

I see that your John Walter Crowe gave his father’s name as William Crowe, miner.
I found a Wm Crowe, miner of Ballamilghyn, Lonan, who married Eliza Cannon in Lonan in Jan 1862. Their first child was baptised a few weeks later. By 1871 they had 7 children !
Food for thought, anyway.
