Just a thought - rather than being a deliberate name change isn't it more likely that the registrar mistakenly or automatically wrote the more familiar name "Moore", which is very common on the Island, without realising or noticing the difference? The fact that the man himself signed as "Moores" and continued using that name seems to back up the idea that it was just a slip.
