If your grandmother was born in Ireland,you have quite a search on your hands, there are so many Carroll's still living in Ireland that I decided not to go there research wise.
Most records are kept by the Parish Catholic Church,and you need to know which Parish!!!
I believe there are census online for Southern
Ireland,you could Google same and see what comes up.
