Good to hear from you again.
I know of Andrew and Jane, they married by Licence at the church at Ballaugh 15/06/1841, he had the permission of his guardian William Quayle which if he was say 20 in 1841 he would have been too old to accompany his convict mother.
The indent of convict for the Mary III lists sarah as having 2 daughters both on board and 3 sons one on board. Thomas had been convicted with Sarah and was transported on the Mary Ann and as one son was on board another was either left behind or deceased.
Ballaugh is a fair way from Castletown and if Charles and Elizabeth are living with the Collins family, apparently Catholic like themselves, in Castletown in 1841 then he is also a candidate.
The baptism you noted of Sarah Daughter of Michael LYNCHY and Sarah MULLAN (I have looked at the LDS and the transcription uses and "E" where the film shows an "A") also has Ann Collins as a God Parent which may indicate a family bond which could have been strong amongst the Catholic minority.
I have not yet found Charles and Elizabeth's marriage nor any children but Charles my have been widowed between the1851 and 1861 census as there is a Charles of the right age with a Sarah and a child Jane registered in 1861.

The search goes on.
