I can only offer these clues based on Brian's burial and census data.
In the 1841, and 1851 census there is no Sarah who fits.
I did find the follwing entries for Patrick:
1. 1841 district 3 page 7 or 8 entry 38
Ann Moore 50
Ann Moore 20
Catherine Moore 14

The 1841 census you gave appears to be that for Thomas Moore & Ann Shimmin family

Ann Moore 50 is Ann Shimmin c 12 Sep 1789 (d of Philip Shimmin & Catharine Quine)

Ann Moore 20 (c 09 Jan 1821 Patrick) married Robert Watt ( s/o David Watt & Jane Qualtrough c 22 Oct 1817, Rushen) 05 Feb 1842, Patrick & went to USA on 12 Jun 1844 with d Ann Watt (c 25 Aug 1842, Patrick) & s Robert Watt (c 30 Nov 1843, Patrick).

Catharine Moore 14, I did not have her listed. (c 09 Aug 1829, Patrick) d of Thomas Moore & Ann Shimmin (from LDS)

Thomas Moore 50 (still hard to figure out which Thomas Moore he is, 1788 or 1790?)

Dates appear to be close, age difference could be because of the way entries were placed because of blocking.
