I have a strong suspicion that Thomas' mother was Catherine Lord.

The IGI gives a bp for Thomas son of Catherine Lord/Thomas Stalker at Lezayre in 1813. This seems to me like the Thomas you are looking for. The IGI source is an extracted record (i. e. not patron-submitted) so should be accurate.

Have you looked at the IOM census for 1841, and 1851 to see if you can find Thomas there?
