I'll see if my cousin knows anything more - hopefully he'll reply tonight or in the next few days - before considering ordering the will, but you make a strong case for Eliza being the daughter (probably) of John Clark. I guess she could also be one of the 3 25 yr old Elizabeths , given the encouragement to round down ages to the nearest 5 - or else perhaps she was visiting the Ellis family or some other relations in the northwest, or, like many of my forebears, just did not appear in the 1841 census.
