Christenings generally were shortly after birth.
I did check the 1851 and 1861 census but did not find Edward.
The IGI was struggling yesterday and is down today, but you may have some luck wuth the 1881 US census as that might have bithplaces and ages of his children.
I did check all Edwards in 1841 and there are 10 in all. The Edward living with William & Isabella gave his age as 15. This is consistent with someone born between July 1861 and June 1826 as ages over 15 were rounded down to a multiple of five (see Brian's response). The next closest Edwards were aged 20 and eight, so this is almost a certainty.
Although as Frances notes, there are no likely wills, Brian's site has an interesting petition regarding a John Cowin, miner, formerly of Lonan, who died in Hopkins County, Kentucky in 1887. It is possible that this is the John, aged 24 in the 1851 census, mentionned by Brian.
