Yes, Frances, I think you’re right in doubting my suggestion that Eleanor Cannell nee Watterson’s parents could be John Watterson and Cath Curphey.
The Cath Watterson 45, Eleanor Watterson 40 (with old John Watterson 85 and John Watterson 15) at Ballaglonney Arbory in 1841 are still there in 1861, both spinsters, aunts to the young John Watterson. Next door are young John’s parents Thomas and Ann. Thomas is age 60. It certainly looks likely to be the family of John Watterson and Cath Curphey.
The Eleanor Watterson baptism in Rushen suggested by Lisa is this one:

She fits the profile of the EW who married Thomas Moore in 1820 and lived all her life at Ballafesson/Surby.
There doesn’t seem to be any clue to pin down the birth year of Lisa’s Eleanor Cannell nee Watterson. Marriage in 1822 and death after the birth of daughter Elizabeth in 1839 gives a range of 1793 to 1804.
The only other Arbory-born legitimate birth in the IGI seems to be this one:
