In 1881, Elizabeth's birth parish is given as Patrick, and her age as 27. Working backwards, the most likely ES in 1871 is the 17 yr old domestic servant b Patrick, in Braddan in a Cubbon household in which the wife and a daughter are named Lydia (a name subsequently given to one of Elizabeth's daughters)
1861 using Ancestry is a good example of why it's best to use Brian Lawson's census indices ---- Elizabeth is listed as Betsey by Brian, but as Walter by Ancestry. The writing is appalling.

This Betsey is the one you mentioned, daughter of Thomas Shimmin age 40 in 1861 and Ann age 37. The oldest child in the family is Robert age 14.
Using Robert to find the family in 1851, it turns out that Ann's mother and sister are also in the household (Hannah Corlett age 58 b Lonan and Margaret age 15 b Patrick). This is probably the marriage of Elizabeth's parents:
